Wings - stugoo style

Ingredients List

  • (per 1 lb of wings) 1kg ~ 2lb
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • optional (for every 1lb),
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • optional
  • 100-200 ml olive oil
  • 3 cloves garlic
  • 1 tsp smoked paprika
  • 1 bay leaf
  • teaspoon lemon (to taste)

Method

  1. pat dry the wings
  2. coat the wings in the rub
  3. leave on a tray uncovered in the fridge for a few hours or overnight
  4. Take the ingredients for the sauce and blitz using a hand blender. Leave to one side.
  5. Oven to 220/230 (fan)
  6. bake skin side up for 20-30 minutes, baste every 10 minutes with the sauce
  7. turn over bake for another 10
  8. Optional - turn over again and leave 5-10 min longer to turbo crunch

Notes & thoughts

20 min, check, maybe add 10, turn 15, just leave em in for as long as you want till they go crispy. Goes great with franks hot sauce and butter too.
