Roasted cherry tomatoes
Ingredients List
- Olive oil
- small handful of cherry tomatoes
- Garlic powder / 1 minced clove of garlic
- Salt
- Pepper
Method
- Turn on the oven to 180'C
- Put the tomatoes in a snug oven dish
- Poke each tomato with just the tip of a sharp knife
- Drizzle over a good glug of olive oil
- Cover the tomatoes with the garlic and season with salt and pepper
- Roll the tomatoes in the olive oil, and seasoning to coat
- Pop in the oven for 10-12 minutes
- Serve the tomatoes with all the juices
Notes & thoughts
Yeah sure this is simple, but its a great way to enjoy cherry tomatoes. We have this with scrambled eggs, avocado, mushrooms and toast.
