Roasted cherry tomatoes

Ingredients List

  • Olive oil
  • small handful of cherry tomatoes
  • Garlic powder / 1 minced clove of garlic
  • Salt
  • Pepper

Method

  1. Turn on the oven to 180'C
  2. Put the tomatoes in a snug oven dish
  3. Poke each tomato with just the tip of a sharp knife
  4. Drizzle over a good glug of olive oil
  5. Cover the tomatoes with the garlic and season with salt and pepper
  6. Roll the tomatoes in the olive oil, and seasoning to coat
  7. Pop in the oven for 10-12 minutes
  8. Serve the tomatoes with all the juices

Notes & thoughts

Yeah sure this is simple, but its a great way to enjoy cherry tomatoes. We have this with scrambled eggs, avocado, mushrooms and toast.
