re: the sauce, careful about burning the marinara, but a slow boil really helps. we added some honey. 2 cans of regular uk tinned tomatoes is fine for this. used 15g of fresh yeast and followed the overnight recipe. dough was super sticky, and really hard to work with, second day snd half of dough was much easier to work with. Maybe a second rise next time? Dont forget to push the pizza out in a shape when doing this. a rolling pin makes for a thin base that wont rise. slightly oiled the pan before it went in the oven, gave a crispier base (dont have a pizza stone)
