Panelletes

Adapted from the original recipe.

Ingredients List

  • 3 eggs, divided
  • Zest of 1 small lemon
  • 300g packed brown sugar
  • 100g potato (or sweet potato), cooked, peeled and mashed
  • 500g almond flour
  • 350g raw pine nuts or finely chopped almonds (or a 50/50 mix)
  • 1 tbsp water

Method

  1. Stir together one egg, the lemon zest and brown sugar until combined
  2. Add the mashed potato and stir through, then gradually work in the almond flour until fully combined
  3. Shape the dough into a disk and refrigerate (optional), or proceed straight away
  4. Roll the dough into 1-inch balls, about 20g each
  5. Whisk a second egg in one bowl and tip the nuts into another
  6. Coat each ball in egg, then press into the nut mixture until fully covered
  7. Heat the oven to 220C/425F, and place the panellets on a parchment-lined baking sheet
  8. Whisk the remaining egg with the water and brush over each one
  9. Bake for 10 minutes until lightly golden on top — keep an eye on them so the nuts don't burn

Can use sweet potato instead of potato
