Take cod fillets and pat them dry. make a double dredge station, of plain flour, 1 egg per fillet. and breadcrumbs. season the flour with salt, pepper, herbs and spices of your choice. coat the fillet with flour, then egg, then breadcrumbs and place directly on to a lined oven tray. bake in a 200 oven for 15-20 minutes until the cod reads 56C on a thermometer did this with Cod, try with haddock. served with roasted carrots and chips. Spices in the dredge, za'atar, smoked paprika, garlic powder
