Orange sauce (with duck)
Ingredients List
- 200 ml fresh OJ (freshly squeezed, no bits)
- 4-5 cloves garlic, smashed under side of knife
- 1.5 teaspoon honey,
- 2 sprigs rosemary
- duck fat
Method
- in the duck fat add the garlic and the rosemary, medium heat
- if using dry rosemary wait till the garlic has cooked before adding the rosemary,
- throw in the oj and reduce to a thin syrup consistency,
- season with salt to balance the sweetness
- remove the rosemary and garlic (use a sieve if dry ingredients)
- serve over duck
