Farofa

Ingredients List

  • 2 cups de Farinha de Mandioca (mandioc, cassava flour)
  • 100g bacon em cubes
  • 2 level soup spoons de dry Chimichurri
  • Sal, 1 spring onion e small amount of parsley to taste
  • 1 small white onion diced
  • 3 cloves of garlic diced
  • olive oil
  • Parsley

Method

  1. add olive oil to the pan.
  2. fry the bacon render the fat, but not too golden,
  3. sweat the onions, then the garlic,
  4. add the chimichurri hydrate it in the juice/fat
  5. add the cassava flour then the parsley and spring onion
  6. toast until yellow (_almost_ golden)
  7. careful not to burn as it turns very quick
