No need to peel, get some floury potatoes chop them lengthwise into fingers. par boil for 8 minutes toss in olive oil, salt & pepper, and cajun seasoning. oven bake at 180 for 45 minutes, turning halfway through cut the chips about the thickness of your finger, squared, try not to go too thin so they can be fluffy inside. can freeze some if you make a big batch.
