Black garlic and chipotle roast beef with beef dripping carrots

Ingredients List

  • 1kg beef, ideally a boneless rib of beef
  • 1 tbsp of black garlic
  • 1 tsp chipotle chilli, (flakes)
  • 1/2 tsp smoked paprika
  • 1 orange, zested
  • 1 tbsp of thyme leaves
  • CARROTS
  • 8 carrots, peeled and halved lengthways
  • olive oil
  • salt
  • pepper
  • PAN SAUCE
  • 250ml of chicken stock
  • 1 dash of red wine
  • 1 tbsp of flour

Method

  1. Mix together the black garlic paste, chipotle, paprika, orange zest and thyme leaves, then slather liberally over the beef with plenty of salt and pepper and leave to marinate in the fridge overnight
  2. Remove the beef from the fridge an hour before cooking to reach room temperature
  3. Preheat the oven to 220°C/gas mark 7
  4. Toss the carrots in olive oil and sprinkle with salt and pepper
  5. Place the beef in an oven tray with the carrots arranged around the sides. The carrots will roast in the beef drippings, making them extra delicious
  6. Place the tray in the oven. After 20 minutes of roasting at 220°C, turn the oven down to 160°C and roast for a further 30 (rare) to 40 minutes (medium-rare)
  7. Remove from the oven, lift the beef onto a plate and cover with foil. Leave to rest for 20 minutes
  8. In the meantime, make a quick pan sauce. Strain the juices from the tray into a pan and add the wine and chicken stock. Bring to the boil and reduce for a few minutes
  9. Whisk in a spoonful of flour to thicken and simmer to cook out the floury taste. Taste and season with salt and pepper
  10. Carve the beef against the grain and serve up with roast carrots and gravy

Notes & thoughts

Didnt have black garlic so I used smoked garlic and a little balsamic vinegar. Cooking time for the beef is 20min @ 220, then 30min per kg @ 160. Cooked 1.35kg sirlon joint for 40min @160, fan came out at medium, maybe shave off 5 minutes next time?
