Orange sauce (with duck)

Ingredients List

  • 200 ml fresh OJ (freshly squeezed, no bits)
  • 4-5 cloves garlic, smashed under side of knife
  • 1.5 teaspoon honey,
  • 2 sprigs rosemary
  • duck fat

Method

  1. in the duck fat add the garlic and the rosemary, medium heat
  2. if using dry rosemary wait till the garlic has cooked before adding the rosemary,
  3. throw in the oj and reduce to a thin syrup consistency,
  4. season with salt to balance the sweetness
  5. remove the rosemary and garlic (use a sieve if dry ingredients)
  6. serve over duck
